Corn cake Fritters ~ Sporty Appetizer for the Super Bowl

The Super Bowl is right around the corner! Are you ready ? We are going to glued to the TV. I have 2 big football fans that live at my house my husband and my 3 year old son. My boys enjoy watching football and participating in fantasy football throughout the whole game. Since our home team is playing I will also join them. And, you can’t have a football game without good food. I get so excited for this day and thinking what yummy treats/appetizers I want to serve! Superbowl appetizers are always a great choice and I decided to make Football shaped Corn Cake Fritters.IMG_3635-1 bmSo, in the EXPECTATION…….HOPE…..POSSIBILITY of SF to win, Here is the recipe. Ingredients:

  • 1 can of corn, whole kernels, well drained (a packet of frozen corn)
  • 1/2 teaspoon salt (to taste)
  • 1 medium onion, finely chopped
  • about 1 tablespoon red Thai curry paste, more if you want
  • 1 1/2 tablespoon soy sauce
  • ½ bunch cilantro, chopped (about 2 tbsp)
  • about 1/4 cup rice flour (more if you think the batter is too thin)
  • 1tbsp corn flour
  • dash of black pepper
  • 2 tbsp sweet chilli sauce
  • Oil for shallow frying
  • Sliced white cheese, cut in strips (I used Swiss)

  1. Mix everything together to make thick batter.
  2. Heat the oil in a pan.
  3. Spoon the corn mixture into the pan to form football shape patties (I use cookie cutter to make shape) and cook until golden brown on both sides, about 3-6 minutes per side.
  4. Place Swiss cheese strips in the middle of your football corn cake to form the laces.
  5. Serve with sweet chili sauce.
