Hi Everyone! It’s been a lazy Saturday morning, thinking of making breakfast for us. We all know, breakfast it’s the most important meal of the day. When it comes to breakfast, we always make something with rice or wheat based like poha, idli, upma etc. I am thinking of making something different. I have banana and walnuts in my pantry. Banana bread is the one thing comes in our mind right? Who doesn’t love walnuts and bananas surrounded by doughy goodness. I am making bite size version of banana bread ‘Banana walnut mini muffin’. It is incredibly easy to make.
2 ripe medium size bananas (Original recipe was 1 ½. bananas and I increased by ½ to compensate for the egg)
½ cup sugar
¼ cup melted unsalted butter or ¼ cup canola oil
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
¾ cups of flour (all purpose)
¼ Vanilla essence
Small handful of walnuts, chopped.
Preheat oven to 375 degrees F.
Line muffin pan with muffin paper cups
Mash bananas well
Chop the walnuts and reserve ½ tbsp for sprinkling on top.
Add sugar and melted butter/oil
Mix the dry ingredients really well or sift and then add to banana mixture.
Mix just enough to bring everything together
Fill muffin cups about 3/4 to the top
Sprinkle with chopped walnuts.
Bake for 14-16 minutes or until a toothpick inserted in the center comes out clean. If you’re using multiple pans, you might want to rotate them midway through the cooking time.
