Aamras….Mango Milk Shake with Pistachios

Who doesn’t like king of fruits Mr. Mango? I’m a huge fan of him. Summer season is incomplete without mention of aamras. In India, this is the time of the year when you get Mangoes in abundance everywhere. Streets are filled with hawkers selling the King of fruits. Eating mangoes sometimes becomes little messy so Aamras is a great idea to have this irresistible fruit. This smooth comforting dessert is not only delicious but extremely easy to prepare. All it takes is a few minutes of your time and very few ingredients and Voila! A scrumptious dessert is created.Ingredients:

  • 3 Ataulfa mangoes pitted, peeled and pureed
  • 2 tbs of chopped pistachios
  • 1cup of milk
  • 2-3 tbsp of sugar

Directions:

Place all ingredients except pistachios in a blender and set to a medium speed. Puree until the ingredients are smooth. Garnish with pieces of pistachio nuts and scoop of ice cream and serve chilled.Variations:
Use 4-5 scoops of vanilla ice cream instead of milk and sugar. If ice cream is very stiff or frozen solid, simply place it in the refrigerator for 1 hour to let it soften up.
Another variation add ¼ tsp cardamom powder, fruits (grapes, blueberry, strawberry) and dry fruits (cashew and raisins).
