So your little one has to eat……Let’s make pancake as always. I know for some of you this sounds completely boring right!!!! for my son too. If you are one of those, I say spice up your morning with banana, walnut, hmmm chocolate, or all of the above if you are looking for a real adventure. I know you must have guessed it by now. Yep, I am gonna make marbled banana chocolate bread. Who doesn’t like banana bread with chocolate? My son and I immediately enjoyed this bread.This bread is good any time of year and for any occasion. It makes a great (and easy) gift too and I always bake extra for family and friend. Ingredients;
- 2 cups all-purpose flour
- ½ tsp Baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup sugar
- 5 tbsp vegetable oil
- 1 ½ cups mashed ripe banana (about 3 bananas)
- 1tsp Vanilla extract
- ¼ cup plain low-fat yogurt
- ¼ cup + 2tbsp milk
- ¼ cup Cocoa powder
- ¼ cup chopped walnut (omit if you have allergy)
- Cooking spray
Preheat oven to 350°.
In a medium bowl, sift together the flour, baking soda, baking powder and salt, stirring with a whisk.
Place sugar and oil in a large bowl; beat with a mixer at medium speed until well blended (about 1 minute). Add banana, milk, vanilla extract and yogurt; beat until blended.
Add flour mixture to the wet mixture and combine. Add walnut and mix.
Remove 1 cup of batter into a small bowl and stir in cocoa powder
Spoon chocolate batter alternately with plain batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray and dust with cocoa powder. Swirl batters together using a knife.
Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Let it cool down for 10-15 minutes in pan on a wire rack; remove from pan and cool completely before slicing.
Serve plan or dusted with powdered sugar and enjoy with milk.
